KDS (kitchen display system)

A KDS, or kitchen display system, is a kitchen screen that shows incoming orders in place of printed tickets, so cooks see, time and clear each order.

A KDS, or kitchen display system, is a screen in the kitchen that shows incoming orders in place of printed kitchen order tickets. Each order appears as a card with its items and the time it arrived; a cook taps or bumps the card when the dish is done, and the card moves off the screen or over to the packing station. Cafes, cloud kitchens and larger restaurants in India run a KDS on a tablet or a wall-mounted screen, usually fed by the same software that takes the orders.

Why it matters

Paper tickets get lost, smudged and stuck behind the next ticket. A KDS keeps every open order visible, colours the old ones so the kitchen sees what is running late, and gives you a record of how long each order took from punch to bump. It also removes the printer, paper rolls and jams from a hot line. The trade-off is that a screen costs more up front than a basic thermal printer, needs reliable power and Wi-Fi, and is more than a kitchen doing 30 orders a day needs. The comparison in kitchen display system vs printed KOT helps you decide at which volume the screen pays for itself.

Example

A cloud kitchen gets 120 orders between 7 pm and 10 pm, about one every 90 seconds. With printed tickets, the chef is tearing slips off the printer and pinning them to a rail while orders keep arriving. With a KDS, the screen shows twelve open orders, the oldest on the left turning amber at eight minutes and red at twelve. The packer sees which three orders are complete and which are waiting for one item, and the rider is called only when the card is bumped. If that cuts the time each order waits on the pass by two minutes, that is four hours of waiting removed from one evening, and fewer cold biryanis going out.

How a WhatsApp order travels from chat to screen is covered in cloud kitchen order management.

On Tezzu, orders land in a live dashboard and on the staff app, so a tablet in the kitchen can show incoming orders, and you can also print a KOT for each one.
